
If you’ve ever worked with a commercial pizza oven, you know the struggle. You’re trying to get a consistent bake, but the top deck is losing heat out the exhaust while the bottom deck is soaking up leftover heat from everything above it. It’s a total pain. Standard heating elements just can’t keep up with that kind of imbalance. That’s why we switched to clear quartz infrared bulbs. The secret is giving every deck its own independent control. Here is how it actually works. These quartz bulbs put out short-wave infrared radiation. Instead of waiting for hot air to move around—which is slow and uneven—the IR energy hits the dough and toppings directly. We hook these bulbs up to separate PID controllers. This means you can dial in the exact wattage for each level. If the middle deck feels a bit chilly, you just bump up the power to those specific tubes. You don’t have to worry about scorching the rest of the oven just to fix one cold spot. As for the gear, we stick with high-purity clear quartz. It can take a massive thermal shock without cracking and stays clear, so the heat actually gets through. We also use standard R7s or SK15 connectors. Why? Because when a bulb eventually burns out, you want to be able to pop a new one in and get back to baking immediately. One heads-up, though: watch your power density. A high-wattage tube gives you that instant, perfect sear, but it pulls a lot of juice. Make sure your contactors and relays can handle that initial surge of current, or you’re going to have a bad time. The best part? Your preheat time goes from hours to minutes. It’s a massive win for your workflow. But there is a catch. Quartz is brittle. If your oven chassis vibrates too much or a tray bangs into the elements, those bulbs will snap like a toothpick. You’ve got to build in some decent guarding or leave enough space to keep them safe from any accidental bumps.
